  1. In a small bowl, combine the seasoning ingredients. Pat the chicken thighs dry with paper towels and sprinkle them with the seasoning mixture. 
  2. Melt together 1 tbs. of the butter and oil in a large skillet over medium-high heat. Sear the chicken for 5-7 minutes per side. Transfer the chicken to a plate.
  3. Reduce the heat to medium and melt the remaining butter. Add the garlic and saute for 30 seconds, until fragrant, then add the lime juice and chicken broth. Deglaze the pan according to the instructions (see recipe card), and let the sauce simmer for 1-2 minutes, whisking often.

  • In a small bowl, combine the brown sugar, Cajun seasoning, paprika, garlic powder, salt, and pepper. Pat the chicken thighs dry with paper towels and sprinkle them with the seasoning mixture.

    2 pounds boneless, skinless chicken thighs, 2 teaspoons brown sugar, 1 teaspoon Cajun seasoning, ½ teaspoon ground paprika, ½ teaspoon garlic powder, ¼ teaspoon kosher salt, ¼ teaspoon ground black pepper

  • Melt together 1 tablespoon of the butter and the oil to a large skillet set over medium-high heat.

    3 tablespoons unsalted butter, 2 tablespoons olive oil

  • Sear the chicken for 5-7 minutes per side, or until cooked through to 165°F. Transfer the chicken to a plate.

  • Reduce the heat to medium and melt the remaining butter.
